Slow Cooker Pulled Pork Salad

Ingredients
Pulled Pork
·         2 lbs. pork shoulder with f t c p removed
·         1 tbsp smoked p prik
·         1 tbsp chili powder
·         1 tsp g rlic powder
·         to t ste s lt nd pepper
·         2 tbsp veget ble oil, for browning
·         3 tbsp m ple syrup
·         3 tbsp prep red Dijon must rd
·         1 tbsp honey
·         1 L chicken stock
Crispy M ple L rdons
·         1 only the f t c p diced into 1 cm cubes
·         1 tbsp high qu lity m ple syrup
·         1/2 tsp s lt to cure
S l d Mix
·         1/2 he d green c bb ge, thinly sliced
·         10 e ch red r dishes, thinly sliced
·         3 e ch multi color c rrots, peeled into strips
·         2 e ch red plums, cut in h lf with pit removed
·         1 he d rom ine he rts, sliced
·         4 tbsp veget ble oil, for browning nd for drizzling
·         2 tbsp m ple syrup
·         2 tbsp Br ggs pple cider vineg r
Instructions
Pulled Pork
1.     Remove the f t c p with  sh rp boning knife, nd set side.  Se son the pork well with ll of the spices.  He t up oil in  l rge p n until just below smoking point.  Se r ll sides of the pork shoulder until nice nd crispy nd brown.  

2.    Whisk together the honey, m ple syrup, must rd nd chicken stock nd pour into slow cooker. Turn on nd m ke sure liquid is hot before putting the pork shoulder in there s well.  dd in  few b y le ves nd set on high.  M ke sure the liquid just simmers, not just boils w y.  Cook for 4-5 hours. 

3.    NOTE:  The pork in this c se doesn't h ve to be fully submerged in the liquid.  s long s you le ve the lid on nd let the slow cooker do its thing, the pulled pork will turn out gre t!


4.    Once the pork is done, pull it out of the slow cooker nd use two forks to shred the pork nd set side.


Crispy M ple L rdons
1.     T ke the diced f t c p nd mix it with the s lt nd m ple syrup, let sit for  few hours.
2.    L y the f t out on  tr y nd cook in  425 degree oven until the pork f t crisps up nd becomes quite crunchy, bout 10-15 minutes.
3.    s the f t cooks it will w nt to stick together.  Use  wooden spoon to mix the l rdons round while cooking.  Set on  pl te with some p per towel to dr in the excess f t.  
S l d Mix
1.     He t the veget ble oil up in  p n.  Get the p n nice nd hot nd dd in the shredded c bb ge nd the r dishes.  Cook for just  couple of minutes to get some browning on the veggies, but not over cook them.  Remove from the p n nd set the plum h lves flesh side down to c r melize the sug rs.  Turn down the he t  bit so you don't burn them.  Set side to cool.  
2.    Dice the plums nd dd into  l rge bowl with the c bb ge, r dishes, c rrot curls, chopped rom ine.  mix in 2 tbsp of veget ble oil, nd the syrup nd vineg r nd toss well.
3.    Pl te the s l d, nd g rnish with the crispy m ple l rdons nd the pulled pork.  For some dded fl vor, c r melize some of the pulled pork in  p n with more m ple syrup.  Enjoy!
