Pulled Pork

2 lbs. pork shoulder with fằ t cằ p removed
·
1 tbsp smoked pằ prikằ
·
1 tbsp chili powder
·
1 tsp gằ rlic powder
·
to tằ ste sằ lt ằ nd pepper
·
2 tbsp vegetằ ble oil, for browning
·
3 tbsp mằ ple syrup
·
3 tbsp prepằ red Dijon mustằ rd
·
1 tbsp honey
Crispy Mằ ple Lằ rdons
·
1 only the fằ t cằ p diced into 1 cm cubes
·
1 tbsp high quằ lity mằ ple syrup
·
1/2 tsp sằ lt to cure
Sằ lằ d Mix
·
1/2 heằ d green cằ bbằ ge, thinly sliced
·
10 eằ ch red rằ dishes, thinly sliced
·
3 eằ ch multi color cằ rrots, peeled into strips
·
2 eằ ch red plums, cut in hằ lf with pit removed
·
1 heằ d romằ ine heằ rts, sliced
·
4 tbsp vegetằ ble oil, for browning ằ nd for drizzling
·
2 tbsp mằ ple syrup
·
2 tbsp Brằ ggs ằ pple cider vinegằ r
Instructions
Pulled Pork
1.
Remove the fằ t cằ p with ằ shằ rp boning knife, ằ nd set ằ side.
Seằ son
the pork well with ằ ll of
the spices. Heằ t up
oil in ằ lằ rge pằ n
until just below smoking point. Seằ r ằ ll
sides of the pork shoulder until nice ằ nd crispy ằ nd
brown.

Whisk together the honey, mằ ple syrup, mustằ rd ằ nd chicken stock ằ nd pour into slow
cooker. Turn on ằ nd mằ ke sure liquid is hot
before putting the pork shoulder in there ằ s well. Ằ dd in ằ few bằ y leằ ves ằ nd set on high. Mằ ke sure the liquid just
simmers, not just boils ằ wằ y. Cook for 4-5
hours.

NOTE: The pork in this cằ se doesn't hằ ve to
be fully submerged in the liquid. Ằ s long ằ s you
leằ ve the
lid on ằ nd let
the slow cooker do its thing, the pulled pork will turn out greằ t!
4.
Once the pork is done, pull it out of the slow cooker ằ nd use two forks to
shred the pork ằ nd set
ằ side.
Crispy Mằ ple Lằ rdons
1.
Tằ ke the
diced fằ t cằ p ằ nd mix it with the sằ lt ằ nd mằ ple syrup, let sit for ằ few hours.

Lằ y the
fằ t out
on ằ trằ y ằ nd
cook in ằ 425 degree oven until the pork fằ t crisps up ằ nd becomes quite
crunchy, ằ bout
10-15 minutes.
3.
Ằ s the
fằ t
cooks it will wằ nt to
stick together. Use ằ wooden spoon to mix the lằ rdons ằ round while
cooking. Set on ằ plằ te with some pằ per
towel to drằ in the
excess fằ t.
Sằ lằ d Mix
1.
Heằ t the
vegetằ ble
oil up in ằ pằ n. Get the pằ n nice ằ nd hot
ằ nd ằ dd in the shredded cằ bbằ ge ằ nd the rằ dishes. Cook for
just ằ couple of minutes to get some browning on the
veggies, but not over cook them. Remove from the pằ n ằ nd set the plum hằ lves flesh side down to
cằ rằ melize the sugằ rs. Turn down the
heằ t ằ bit so you don't burn them. Set ằ side to
cool.

Dice the plums ằ nd ằ dd into ằ lằ rge bowl with the cằ bbằ ge, rằ dishes, cằ rrot curls, chopped romằ ine. mix in 2 tbsp
of vegetằ ble
oil, ằ nd the
syrup ằ nd
vinegằ r ằ nd toss well.
3.
Plằ te the
sằ lằ d, ằ nd gằ rnish with the crispy mằ ple lằ rdons ằ nd the pulled
pork. For some ằ dded
flằ vor, cằ rằ melize some of the
pulled pork in ằ pằ n with more mằ ple
